Ingredients
For the waffles:
- 120 gr. AMINO ANIMO Power Mix Vanilla protein
- 300 ml + 150 ml vegetable milk
- 200 ml vegetable cream
- 5 tbsp. flaxseed
- 3 tbsp. agave syrup
- 2 tbsp. baking powder
- 1 pinch of salt
- 1 vanilla powder
- 120 gr. self-raising flour
- 3 tbsp. melted vegetable butter or oil
- 1 tbsp. apple cider vinegar
For the hazelnut praline:
- 200 gr. hazelnuts
- 100 gr. brown sugar
- 50 gr. vegetable butter
- 100 gr. chocolate couverture
Preparation
For the waffles:
- Melt the butter.
- Boil the 300 gr. vegetable milk with the flaxseeds for 3-4 minutes and strain.
- Put all the ingredients in a bowl and mix lightly to combine all the ingredients.
- Leave the mixture for half an hour in the refrigerator.
- Prepare the waffles in a waffle maker.
For the hazelnut praline:
- Heat the hazelnuts in a preheated oven at 180ᵒC for 5 minutes.
- Put 1/4 of the sugar in a non-stick pan at medium-low heat. Once it melts, put the second quarter and continue the process until all the sugar has melted.
- Add the hazelnuts to the caramel and mix well. Spread the mixture on non-stick paper and let it cool.
- Melt the butter.
- Break the caramelized hazelnuts and put them in the blender with the melted butter. Beat until the hazelnuts release their oils and the praline is formed.
- Melt the couverture in a bain-marie. Add it to the praline and continue beating until the mixture is homogeneous.
