VEGETABLE MEATBALLS WITH AMINO ANIMO PEA PROTEIN

These vegetable meatballs are rich in protein, both from the AMINO ANIMO PEA organic protein and the peanuts! Barley rusks have replaced the bread, making the recipe even healthier!

Ingredients

  • 2 Florina peppers
  • 1 carrot
  • 2 zucchini
  • 1 potato
  • 30 g. ΑΜΙΝΟ ΑΝΙΜΟ Pea Protein
  • 2 cloves of garlic
  • 1 tsp. lemon juice
  • Salt to taste
  • 110 g. barley nut
  • A pinch of pepper, thyme, oregano
  • 30 g. roasted peanuts
  • 3 tbsp. olive oil

Preparation

  1. Cut the pepper, carrot, pumpkin, and potato into small cubes.
  2. Mix the vegetables with the olive oil and bake in a preheated oven at 180 degrees for about 30 minutes.
  3. Chop onion and garlic.
  4. Grind the barley nuts in the blender until they become powder.
  5. Put half of the baked vegetables, the onion, and the garlic in the blender, and beat well until they melt.
  6. Put all the ingredients except the peanuts in a bowl and knead well.
  7. Grind the peanuts in the blender until they become powder and put them on a plate.
  8. Spread a sheet of parchment paper on a baking sheet.
  9. Shape the mixture into burgers, pass them first through the peanuts, and put them in the pan.
  10. Bake in a preheated oven at 180 degrees for about 30 minutes.
