VEGAN MUSHROOM SOUP WITH AMINO ANIMO RICE PROTEIN

Whether you're vegan or not, you have to try this vegan mushroom soup with black-eyed peas and plant protein cream. Creamy & earthy, the comfort recipe is full of flavor and protein, thanks to the addition of AMINO ANIMO Rice Protein.

Ingredients 

For the mushroom soup:

  • 100 gr. black-eyed peas
  • 200 gr. mushrooms
  • 2 medium onions
  • 2 cloves of garlic
  • 6 tbsp. olive oil
  • 1 1/2 liters of water
  • 2 tbsp. lemon juice
  • Salt
  • 1 pinch of pepper
  • 1 pinch of thyme
  • 2 gr. fresh thyme (optional)

For the plant protein cream:

Preparation

  1. Finely chop the mushrooms, onions and garlic.
  2. Boil the black-eyed peas in 1 liter of water, until soft.
  3. Add all the remaining ingredients of the mushroom soup and boil for 10-15 minutes.
  4. Purée the soup in a blender.
  5. For the cream, beat all the ingredients in a blender.
  6. Add the protein cream to the soup and boil for 2-3 minutes.
