Ingredients
For the mushroom soup:
- 100 gr. black-eyed peas
- 200 gr. mushrooms
- 2 medium onions
- 2 cloves of garlic
- 6 tbsp. olive oil
- 1 1/2 liters of water
- 2 tbsp. lemon juice
- Salt
- 1 pinch of pepper
- 1 pinch of thyme
- 2 gr. fresh thyme (optional)
For the plant protein cream:
- 40 gr. AMINO ANIMO Rice Protein
- 120 ml water
- 1 tsp. agave syrup
Preparation
- Finely chop the mushrooms, onions and garlic.
- Boil the black-eyed peas in 1 liter of water, until soft.
- Add all the remaining ingredients of the mushroom soup and boil for 10-15 minutes.
- Purée the soup in a blender.
- For the cream, beat all the ingredients in a blender.
- Add the protein cream to the soup and boil for 2-3 minutes.
